CHRISTMAS CRANBERRY
COFFEE CAKE - Easy Cranberry Coffee Cake is perfect Christmas dessert! Loaded
with cranberries and white chocolate chips and topped with cream cheese
frosting is a family favorite!
INGREDIENTS
For cake:
o 3 eggs
o 2 cups sugar
o ½ cup melted butter
o 1 teaspoon vanilla
o ¼ teaspoon baking soda
o ¼ teaspoon baking powder
o ½ teaspoon ground ginger
o Pinch of salt
o ½ cup buttermilk
o 1 tablespoon grated Orange zest
o 2 cups all-purpose flour
o ½ cup white chocolate chips
o 2 cups fresh cranberries or dried cranberries
soaked in warm water for 20 minutes, then well drained and towel dried
For cream cheese
frosting:
o 8 oz cream cheese, softened
o 1 cup powdered sugar
o 1 teaspoon vanilla extract
For topping:
o Dried cranberries, optional
o ½ cup white chocolate chips, melted
INSTRUCTIONS
To make the cake:
1. Preheat oven to 350 degrees
2. Spray 9-inch square baking pan, set aside
3. In a medium bowl, whisk together flour, baking
soda, baking powder, ground ginger and salt, set aside
4. In the bowl of an electric stand mixer beat
eggs and sugar until slightly thickened and light in color about 5-6 minutes
(the mixture should almost double in size)
