Healthy Greek Yogurt and Honey Blueberry Muffins






Ingredients

  1. 2 cups whole wheat flour
  2. 1 cup all purpose flour
  3. 1/2 cup + 3 tablespoons brown sugar
  4. 1 tablespoon baking powder
  5. 1/2 teaspoon baking soda
  6. 1/2 teaspoon salt
  7. 1/2 teaspoon cinnamon
  8. 1 cup low-fat greek yogurt
  9. 1/2 cup whole milk (you may use another fat percentage if preferred)
  10. 1 teaspoon vanilla extract
  11. 2 large eggs, at room temperature
  12. 1/4 cup honey
  13. 1/2 cup olive OR coconut oil (if using coconut oil, be sure it is above room temperature and melted)
  14. 1 cup blueberries


Instructions

1.    Preheat oven to 400 degrees (F).
2.    Line a 12-cup muffin tin with paper liners; set aside.
3.    In a large bowl whisk together flours, sugar, baking powder, baking soda, salt, and cinnamon; set aside.
